The Vaptistis Winery dry white wine, made from Assyrtiko and Monemvasia grapes, has a canary-yellow colour with silver highlights. Its aroma is predominantly fruity, with notes of pear, apple and white peach, along with subtle notes of dough.
The two grape varieties are vinified using the same protocol. The wine undergoes static settling at 11 °C and alcoholic fermentation at 17 °C for 20 days, without pre-fermentation cold maceration. It ages for 6 months in tank and 4 months in bottle. It pairs with fish, mussels, octopus and chicken with mushrooms, and also goes well with white meats, poultry, vegetables, legumes and spicy Asian cuisine.
