Peplo Rosé from Syrah, Agiorgitiko, Mavrofilero with each variety contributing 1/3 to the wine. The Agiorgitiko in acacia barrels, the Syrah matures on its lees in a stainless steel tank, and the Mavrofilero in clay amphorae along with its skins for 4 months. All vineyards are located at an altitude of over 600m.
Peplo, a detail that gave the wine its name. The skins of Mavrofilero, in order to be immersed in the amphorae and controlled, are placed inside a cloth (cheesecloth - veil) with the help of which we press the mass at the end by hand to obtain the young wine.
The color is bright, fine, the ultimate coral with red-gold highlights. On the nose, red fruits dominate, cherry, strawberry, a hint of lemon, citrus, grapefruit, white flowers, honey, a bit of violet, and a touch of minerality.
The mouth is full of nerve and acidity, fatty, cool, complex, multi-layered (acacia, clay, sweet vanilla, metal, structure) while the mouth aromas faithfully follow those of the nose with the dominant presence of sweet lemon and citrus.
The aftertaste has duration and complexity.
