Acacia honey is produced by the Souka family on the slopes of Chelmos. It has a mild sweet taste and a delicate yet distinctive aroma from the acacia flowers. It has a particularly characteristic color, being blonde, shiny, and almost transparent. It has a high fructose content and an increased fructose/glucose ratio, which is why it remains liquid for a long time.
