Saturated fatty acids are recommended to represent no more than 11% of total daily calories, as they increase cholesterol and the risks of heart and other diseases.
Generally, animal fats are rich in saturated fatty acids and poor in unsaturated ones, while the opposite is true for fish oils and vegetable oils.
Unsaturated Fatty Acids do not increase cholesterol and have beneficial effects on the cardiovascular system. They are classified into:

- Polyunsaturated Fatty Acids
Monounsaturated fatty acids are mainly represented by oleic acid (Omega-9). Among polyunsaturated fatty acids, the omega-3 and omega-6 fatty acid groups are of particular importance. Alpha-linolenic acid (ALA) from the omega-3 group and linoleic acid (LA) from the omega-6 group are called essential.
When consuming omega-3 fatty acids, the origin of the fish should be considered, as they may contain toxic substances if they come from polluted seas.
