The quality of each wine depends on a set of important factors: a privileged location, soil physiology, a favorable climate, and grapevine varieties. All these factors coexist in Amyntaio, on a plateau with many lakes, where the land, the sun, and the vine have created a unique combination.
The viticultural zone of Amyntaio, designated as a Protected Designation of Origin of Superior Quality, extends across the namesake plateau, at an altitude of 570-750 meters and covers about 8,500 stremmas of vineyards. Administratively, it belongs to the Florina Prefecture, while the most important settlements are Amyntaio, Agios Panteleimonas, Xino Nero Petres, and Vegora.
Variety: 100% Xinomavro.
The closed tank method (cuve close) is applied. For the production of the base wine, an early harvest is conducted so that the grapes have a low potential alcohol level and high acidity. This is followed by the second alcoholic fermentation in small autoclaved tanks, at a very slow pace and low temperatures.
