Parusso’s Barolo DOCG is made from Nebbiolo grapes grown in the vineyards of the villages of Monforte d'Alba and Castiglione Falletto. The wine blends grapes from different vineyards into a single cuvée.
Alcoholic fermentation takes place spontaneously, using the grapes’ native yeasts and without the use of sulfites. The wine is aged for 24 months in small oak barrels, in contact with the lees, and for almost 6 months in the bottle, at a controlled temperature of 15 °C.
