You can never go wrong with a homemade carrot cake. The spicy flavor of the cake topped with the freshness of a cream cheese frosting is one of those perfect combinations you'll never tire of. Preparation: Preheat the oven to 175°C (fan oven 160°C). Ingredients should be at room temperature. Mix 500 g of the mix with 80 ml water, 3 eggs, 150 ml vegetable oil, and 150 g grated carrot. Add chopped nuts and/or soaked raisins for taste. Mix together for 5 minutes, then pour the cake batter into a greased and lined baking tin. Bake the cake in the center of the oven for about 50-60 minutes until golden brown. For cupcakes, bake for 25 minutes.
