Winemaking: Sorting begins in the vineyard and is completed on the sorting table before the grapes are transferred to the tanks. Classic red winemaking is followed at controlled fermentation temperatures. Then, malolactic fermentation and aging in new oak barrels follow.
Aging: 12 months of aging in 300lt French oak barrels. Reductive aging in the bottle for another 6 months.
Tasting Notes: Dense black-red color with a complex nose dominated by aromas of berries and blackcurrants. Full-bodied taste with tannins that are noticeable but pleasantly rounded, in harmony with the notes of oak wood.
Food Pairing: Cooked red meats, wild boar, hard cheeses.
