Green cracked olives are large Greek olives in an oval shape that are usually harvested while still early. They are processed through brine, offering a mild flavor with a bit of bitter and peppery taste.

They are often called Halkidiki, as they exclusively grow in the Halkidiki region adjacent to Mount Athos. The name comes from the Central Macedonia region.

This Greek olive is also called "donkey olive" due to its large size. Halkidiki olives are excellent high-quality table olives and are big enough to be stuffed with other food ingredients.
