Katogi Averoff’s Inima dry red wine is made from Xinomavro and Vlachiko grapes and comes from the Roudina area of Naoussa. The trellised vineyards are cultivated with strict yield control, keeping production below 900 kg per stremma.
Winemaking includes a seven-day pre-fermentation maceration at 12–15 °C and fermentation lasting approximately 20 days at 30–32 °C. The wine is transferred to 300 L Nevers French oak barrels for malolactic fermentation and remains on the lees for two months. It is then aged for at least ten additional months.
