Tasting notes: The harvest of the two local varieties begins in late September. Classic red vinification follows, with extraction continuing until the end of alcoholic fermentation, with gentle stirrings. After the end of malolactic fermentation, the wine ages for a year in French oak barrels, mainly large volume ones. It has a bright ruby color and ethereal nose, with intense ripe red fruits of strawberry, sour cherry, and raspberry that harmoniously blend with the vegetal character of sun-dried tomato and rosemary and the subtle notes of jasmine and spice.
