Cyclops Unripe Oil

A single-varietal extra virgin olive oil Cyclops with very low acidity, made from the Makri variety, boasting a unique personality thanks to the microclimate of the region and the soil structure of the estates from which it is harvested in mid-October.

It is characterized by a medium to high intensity fruitiness with a strong freshness of green olive and notes of green banana, artichoke, and freshly cut grass.

It is processed within 4-8 hours of its harvest under excellent extraction conditions and cold pressing. On the palate, it is complex and delicate with a medium intensity bitterness and spiciness.

It is recommended to consume it raw as a finishing touch on all your dishes.
