Col di Sasso Toscana IGT Castello Banfi is a dry red wine made from Cabernet Sauvignon and Sangiovese grapes grown in vineyards in southern Tuscany. It has a brilliant ruby colour and aromas of ripe fruit, including plum, blueberry and black cherry. On the palate, it is smooth, with soft tannins and a long finish of black fruit.
The grapes undergo a 6–8 day maceration at low temperatures to preserve their fresh aromatic intensity without adding weight to the tannin structure. The wine is aged in tanks for a short time before bottling.
