The altitude, the bodies of water, the sandy soil, the low temperatures, the abundant rains and snowfalls, the mild and dry summer create a unique microclimate to which the local Xinomavro wine owes its distinctive characteristics.
The cultivation of vineyards in the region of Amyntaio has its roots in antiquity. In 1972, the wine-producing zone of Amyntaio was recognized as a “Designation of Origin Amyntaio of Superior Quality” production zone and today it is one of the most important viticulture zones in Greece.
The grapes come from selected vineyards in the hilly areas of the Amyntaio zone.
Winemaking:
- The harvest for Xinomavro usually begins at the end of September.
- A pre-fermentation cold maceration of the grape musts is applied.
- Slow controlled alcoholic fermentation.
