Choco-mandarin Halloween Mousse
The spooky mandarins in their sweetest version!!
Ingredients we need:
6 medium mandarins
200 grams of dark chocolate with 64% cocoa content
400 ml plant-based milk with vanilla flavor
2 grams agar agar
2 teaspoons of water
For the mousse topping: chocolate sprinkles, candies, nuts, crushed cookies
Shall we start?
Preparation of the chocolate mousse
- We chop the chocolate into small pieces and place them in a bowl.
- In a glass, we mix the agar agar with 2 teaspoons of water.
- In a saucepan, we place all the liquid ingredients: we add the vanilla-flavored milk, as well as the water/agar agar mixture.
- We mix well and let the mixture boil for at least 30 seconds to activate the agar agar and remove from the heat.
- We incorporate the milk in three stages while simultaneously mixing well with a whisk.
- We can also use a hand mixer for perfect and quick mixing.
- We cover with cling film and place in the fridge for several hours (ideally overnight).
Preparation for the mandarins
- We cut off the top part to remove their cap.
- We rotate a spoon inside around the peel to detach and remove the interior without disturbing the outer surface.
- With a black marker, we draw eyes and mouth and all the Jack 'o Lantern faces.
Serving
- We take the mousse out of the fridge and mix with the mixer at medium speed for about 5 minutes to incorporate as much air as possible.
- We transfer to a piping bag and place the mousse inside the mandarins.
#Skroutz Tips
- Sprinkle with chocolate sprinkles, candies, nuts, pralines, and biscuit crumbs on the mousse.
- Keep in the refrigerator until serving time.
- The mousse could be made the day before so that it has set.
- For Zero Waste practices with the inside of the mandarins, squeeze a refreshing juice for ourselves or add it to a cake recipe.
