The extra virgin olive oil comes from an ancient olive grove with 4,000 roots, aged up to 800 years. The grove includes indigenous olive trees and unique olive varieties. At the modern certified oil mill of the Monastery, innovative production processes are used, such as composting of residues. The Monastery does not use chemical fertilizers.
