The Hatzidakis Winery was founded in 1997 by Charidimos Hatzidakis and Konstantina Chrysou. Previously, both were employees of the Boutari Winery in Santorini. Everything started when Konstantina showed a neglected family vineyard, located at an altitude of 330 meters in the village of Pyrgos Kallistis.
The vineyard where the Hatzidakis Winery was located had been uncultivated since 1956, presenting a prime opportunity for organic cultivation. It was the first vineyard in Santorini to be cultivated organically and was certified by DIO. Subsequently, in every vineyard they purchased or rented, they applied organic farming methods.
The Hatzidakis Winery is the only certified organic grower on the island and applies the principles of organic farming across all its vineyards.
