Soil

Porous soil formed from volcanic activity and primarily composed of pumice, making it extremely poor in nutrients. There is no organic matter in the soil, resulting in the rootstock's vine generation being unable to survive, so the vineyard is self-rooted. The absence of water is characteristic. The available moisture is retained and delivered to the plants through the porous soil.

Climate

Typical Aegean. Mild winter, relatively cool summer. The amount of winter rainfall, the occurrence or not of some days with heatwaves from late June to early July, and finally the nighttime atmospheric humidity in July & August are the determining factors for quality and quantity.

Vineyard

Autonomous Assyrtiko vineyard, aged 70 – 80 years, with particularly low yield per hectare (320 – 380 kg). The combination of this low yield with the soil and the variety (which results in a high alcohol content & simultaneously high acidity) produces a wine that is full-bodied, vibrant, and with a strong personality.

Winery

On the eastern side of the island, between the villages of Kamari and Monolithos, our winery in Santorini is housed in an exceptional stone building from the previous century, originally a tomato warehouse until 1970.

The winery is equipped with the most modern vinification systems, allowing us to ensure ideal conditions for producing high-quality wines from the Assyrtiko grape variety.

Additionally, in a secluded area away from the winery, we have set up a small vinegar production facility, where with great effort and passion, we produce a rare, sweet, aromatic, and aged vinegar from Assyrtiko.
