Instructions:

With the cookie mix, you can bake traditional hard cookies, soft chewy cookies, or chocolate-filled cookies. You can also mix in berries and nuts.

Mix 400 g with 75 g margarine/butter at room temperature, 100 g chocolate nibs or chopped chocolate, 1 tablespoon liquid glucose/syrup, 0.5 dl water. Stir all ingredients with a whisk for about 3 minutes until a firm dough forms. Roll into a log about 5 cm thick and then cut into 2 cm slices. Place the slices on a baking tray and bake for about 14 minutes at 175°C.

Chocolate Cookies:

Mix 400 g with 75 g margarine/butter at room temperature, 2-3 tablespoons cocoa, 100 g white chocolate nibs/chopped chocolate, 1 tablespoon liquid glucose or syrup, 0.5 dl water, add 1 tablespoon extra water if needed. Stir all ingredients with a whisk for about 3 minutes until a firm dough forms. Roll into a log about 5 cm thick and then cut into 2 cm slices. This will make about 10 cookies. Place the slices on a baking tray and bake for about 14 minutes at 175°C.

The cakes will rise to about twice their size.
