The Limniona variety is harmoniously combined with the charming Muscat variety, offering an exceptional aging distillate. The fermentation of the two varieties takes place in stainless steel tanks, in a controlled temperature environment. Immediately after fermentation, distillation follows to preserve all the aromatic elements. The distillation is done in a stainless steel pot still, keeping only the heart of the distillate, maintaining the fresh and sweet aromas.
The distillation process is slow, allowing the volatile components responsible for the aromas to have an adequate period of evaporation and condensation, so that the valuable organoleptic characteristics of the varieties are fully preserved. The maturation lasts 18 months and takes place in large, old oak barrels of 500 liters, in which high-quality Vinsanto Santorini sweet wines have aged.
Unique for its harmony and elegance, this distillate retains its elegant and fruity notes from the Muscat variety, enriched by the fullness of the Limniona variety.
