Fir honey is one of the rarest honeys in the world. It has a taste reminiscent of vanilla and a pearlescent-caramel color, with a creamy texture. Bees create it from honeydew produced by the insect Physokermes Hemicryphus, exclusively in the fir forests of the Peloponnese, particularly Mainalos and Parnonas. It is honey that is not produced every year due to many factors that must align. Additionally, the extraction of the honey is extremely difficult and costly because it requires the destruction of the combs. For these reasons, its production is very small and periodic over the years. It is one of the best categories of honey, rich in trace elements (potassium, magnesium, phosphorus, iron).
