Fir honey is one of the rarest honeys in the world. It has a taste reminiscent of vanilla and a pearly-caramel color, with a creamy texture. The bees assemble it from honeydew produced by the insect Physokermes Hemicryphus, exclusively in the fir forests of the Peloponnese, mainly of Mainalo and Parnon. It is a honey that does not come out every year due to the many factors that must come together. The extraction of the honey is difficult and costly, requiring the destruction of the honeycombs. For these reasons, its production is very small and periodic across the years.
It is one of the best categories of honey, rich in trace elements (potassium, magnesium, phosphorus, iron).
