Description

Description

This wine comes from grapes of contracted viticulturists of the local variety Mavrodaphne of Kefalonia, cultivated traditionally in the Mavrodaphne zone on the Paliki peninsula at an altitude of 50 - 150 meters. In this zone, there are significant variations in soil types from clay-limestone to limestone soils with hilly and semi-mountainous vineyards of cup-shaped form, and the age of the vineyards is over forty years. Between the vineyards, there are uncultivated areas and olive groves. The soils are clay-limestone. Their cultivation is conventional. The harvest takes place in the first fortnight of September. The winemaking process is biodynamic and includes long extraction, completion of alcoholic as well as malolactic fermentation with indigenous yeasts.

The aging is done in French oak barrels of Allier type with a capacity of five hundred, three hundred liters, and barrique type for twelve months. Bottling does not include other treatments. The produced wine has excellent density and coloring ability but also tasty tannins. The character is robust, vinous, with a long aftertaste that exudes the aromas of ripe forest fruits and the influences it has from vanilla.
