The standard gravitational winery was founded in 1990 in Aigialeia by Angelos Rouvalis, a graduate of oenology from Bordeaux. Angelos inspired and guided the vine growers of Aigialeia in new plantings and selection of varieties. The slopes of Aigialeia stretch above the Corinthian Gulf and touch the mountainous Kalavryta. These are vineyards – balconies of unique beauty with a natural northern exposure that enjoy the sea breeze of the gulf.
The Viognier, the enchanting variety of the Rhône, is cultivated in the mountainous Aigialeia with excellent results. The vineyards are located at an altitude of 800–1000 m in poor and barren soils of ideal mechanical composition.
After pre-fermentation extraction at 8–10°C for 6 hours, the Viognier was sent to the press, where it met the Roditi. Static decantation and slow fermentation at low temperatures (12–15°C) follow until about mid-November. After the end of fermentation, the wine matured in the tank with its lees for about 5 months, utilizing the natural flow of gravity at all stages of winemaking.
