Little known in Greece, sumac is one of the essential spices in the cuisine of Middle Eastern countries. In Iran, you will see jars of sumac on the table, next to the salt and pepper.

Sumac is made from the fruit of plants belonging to the Rhus family that thrive in subtropical climates. It retains the burgundy color of the flowers of the plant.

It has a rich aroma and a slightly sour taste reminiscent of lemon, which is why it is also called sour pepper.
