Pine honey is produced by the Souka family in northern Evia. It constitutes 65% of the total honey production in Greece and comes from the honeydew secretions of the insect Marchalina hellenica, which parasitizes on Aleppo and Trachycarpus pines.

Flavor: Due to its low sugar concentration, it is not very sweet.

Nutritional value: Pine honey is considered honey of high nutritional value, which is indicative of its high ash content. This is mainly due to the large number of different substances present in its composition, with dominant minerals and trace elements such as calcium, magnesium, zinc, iron, and copper.

Aroma: Distinctive, with some likening it to the aroma of iodine.

Color: The color of pine honey is characteristic and darker than thyme honey. The honey produced in spring is lighter and clearer than that produced in autumn.

C crystallization: The crystallization of pine honey occurs at a rather slow rate, as its natural glucose content is low. Pure pine honeys remain liquid for more than a year and a half.
