Black garlic comes from the "Fermentation" of white garlic, which gives it its black color. It has a sweet and smoky taste, with its strong aroma and pungent flavor having disappeared during the aging process.

The beneficial properties of garlic are well known as an edible product as well as a dietary supplement. Historical sources confirm that ancient Greeks and Spartans consumed black garlic before battle.

It has strong antimicrobial action and contains the substance allicin, which causes the dilation of arteries and has a strong antioxidant capacity. It also contains L-Allylcysteine, which is water-soluble and has nearly double the activity of the allicin found in regular garlic, making it an important ally against hypertension.

L-Allylcysteine gives black garlic very strong antioxidant properties, almost 4.5 times more than regular garlic. Additionally, it drastically reduces levels of endogenous peroxidation, with results confirmed by studies.

Other laboratory studies confirm its anticancer properties. It is not recommended for individuals with low blood pressure or other specific conditions, and no allergic reactions have been observed from its consumption.
