The olives are harvested in November by hand or with special machines to avoid damaging the fruits, and are transported as quickly as possible to the olive mill, where the olive oil is extracted the same day using cold pressing (T 0 ΝΤΟ).
The designation as PDO (Protected Designation of Origin) by the EU guarantees the superior quality and integrity of the product.
