The Yanagi Sashimi knife by Ambrogio Sanelli is ideal for preparing sushi or sashimi. The blades are made from specially modified NITRO-B stainless steel (X50CrMoVN15 / AISI440B), where the addition of nitrogen particles significantly improves corrosion resistance and hardness after heat treatment. The hardness of the knife is 57-58 HRC. According to Japanese technique, the knives are sharpened on one side, allowing the food to come into contact with the blade only briefly, minimizing friction. The perfectly balanced and comfortable handles with stitching are made from synthetic POM resin. Washing in dishwashers is prohibited.
