Soudjouk loukoum is a traditional sweet widely produced in Komotini. It is distinguished by its softness and tender texture, as well as its sweet and fragrant flavor, which is enhanced by the walnuts and the powdered sugar added at the end.

The preparation process takes on characteristics of a ritual:

• Whole walnuts are threaded onto string one by one.
• A ground mixture with water and sugar is dipped into the cauldron along with the strings of walnuts.
• The walnuts are hung on poles to cool and stabilize the mixture in the natural environment.

The final product is caramelized with an amber color, covered with white powdered sugar, with which the elongated loukoums are sprinkled one by one.
