In October, when the Athinolia olive variety reaches its ideal green color, the producer selects the best trees and begins the manual harvesting process. The process is very delicate as the olives must remain intact during harvesting. After the harvest, the olives are carefully selected and placed in special barrels with water, salt, thyme, and lemon.
