The white wine Plagios from the Biblia Chora estate comes from the Chardonnay variety with a small presence of Assyrtiko to give it freshness and coolness. The Chardonnay is fermented in new oak barrels, where it remains for about 8 months with its lees, thus completing its rich character. In contrast, the Assyrtiko is fermented in stainless steel tanks, maintaining its liveliness and freshness. Straw yellow color with green highlights. On the nose, rich aromas of ripe fruits, such as melon, apricot, pineapple, and notes of lemon, minerals, and flowers, on a background of vanilla and nuts. Rich, creamy, and oily mouthfeel, with good structure, balanced acidity, and a long aftertaste of fruits, cedar, and vanilla. Pairs well with fatty fish, pasta with creamy sauces, risotto with white sauces, poultry dishes, and mature cheeses. Serve at 10-12°C.
