Ceylon cinnamon is considered to be the highest quality cinnamon, distinguished by its light brown color, delicate pleasant aroma, and intense sweet flavor. Ceylon cinnamon differs from Indonesian cinnamon as it is lighter in color and has thinner layers folded inside its bark, while also containing a much smaller percentage of coumarin.
